Here is what we have on our backs (admittedly we should take 1/4 of this stuff and twice the cash):

My main backpack is a Gregory Shasta. A big bag yes, but I will keep my day bag inside of it when carrying both packs.

My day pack/security system is the PacSafe DaySafe Secure Day Pack. Someone could probably get through this given the time and the tools, but it at least serves as a deterrent.

An Everex StepNote SA2053T Notebook. I was leaning against not lugging a notebook around, but when I came across this 12.1″ machine for under $1000 I decided to grab it.

My iPod. Gotta have tunes for the long bus, train, and plane rides. I’ve got some Spanish lessons on here too (although I’m hopeless)

1 pair of REI Adventure pants. Love these! Super comfortable and quick drying. Jeans are way to heavy for backpacking. REI is really a great company–I’ve never had a problem with returns or exchanges.
